HINTS and TIPS: Handling and Storage: * Highland Texel Gourmet Lamb is a chilled vacuum-packed product * Is Table-ready and can be used immediately or stored in the fridge until the "Best By" date * If not using immediately, freeze the lamb packs for up to 6 months * To thaw, transfer the sealed pack intact from the freezer to the fridge and leave to thaw for 24 hours * Some cuts such as the boneless loins are in one pack. If you wish to just use one loin, half thaw the pack in the fridge, take out one loin and re-freeze the other. * If, when receive your lamb pack, you find the rolled shoulder is too big, cut it half, place in 2 plastic bags and freeze. Cooking of the lamb: * Remember Texel Lamb cooks 30% quicker than traditional lamb. * To tell whether the lamb is cooked to desired tenderness. When the meat looks nearly done you can take it out of the oven and, using tongs, press the roast lightly at the thickest part:
* Always allow lamb to rest. Remove from oven, place on a warm plate, * When ready to serve, carve lamb ACROSS THE GRAIN to ensure tenderness holding meat with tongs rather than a fork, so preventing juice loss. |
