Lamb Salad with Lime Dressing:
2 Highland Texel fillets or loins, sliced
1 tbsp. lime juice
1/2 tsp. chilli powder
1 tbsp. olive oil
salt & cracked pepper
75 gms. rocket or salad leaves
Lebanese cucumbers, thinly sliced
1 cup frozen peas, defrosted.
Lime dressing:
1/4 cup lime juice
1/4 cup olive oil
1 tbsp brown sugar
Whisk together & set aside
Method:
1) Place lamb, lime juice, chilli, salt & pepper in a bowl & toss.
2) Heat frying pan over a high heat & add lamb, cooking for 3-4 min. until cooked to your liking. Cover & allow to rest for 5 minutes.
3) Slice lamb & arrange on plates with rocket, cucumber & peas.
4) Spoon over the dressing & serve.
