MINTED LAMB FILLETS:
Cook fillets quickly so that they are slightly pink when served.
4 Highland Texel Gourmet Lamb Fillets or Short Loin
2-3 shallots or small onion
2 tbsp butter or oil
salt and black pepper
Cornflour
200 gms mushrooms
1/4 - 1/2 cup wine
1/2 cup cream
2 tbsps mint
1-2 tbsps chopped chives
1) Slice fillets or loin & toss in seasoned cornflour. Brown quickly in hot oil or butter. Remove from pan.
2) Lightly saute shallots.& mushrooms. Add wine & bring to the boil. Reduce heat & stir in the cream.
3) Return lamb to the pan, heat through & sprinkle with mint & chives.
