Minted Lamb Fillets 2
Serves 4
4-6 Highland Texel Gourmet Lamb fillets (Could use rump, loins, sliced topside) 2-3 shallots or a small onion 2 tbsps butter
salt and pepper cornflour 200 gms mushrooms 1/4 to 1/2 cup wine 1/2 cup cream 2 tbsps chopped mint 1 - 2 tbsps chopped chives.
1)Slice lamb fillets.
2) Lightly cook shallots or onion in butter. Add fillets, which have been tossed in seasoned cornflour and quickly brown on both sides.
3) Stir in the mushrooms & cook briefly.
4) Add wine & bring to the boil. When the mixture thickens add cream.
5)Garnish with mint and chives.
Serve with new potatoes and green vegetables in season.
