ORANGE BAKED CHOPS

These are one of my favourite lamb-chop recipes. It is very easy to prepare and has a wonderful flavour.
4 Highland Texel Gourmet Lamb shoulder or leg chops
2 tbsps olive oil
2 T (30ml) vinegar
1 tsp salt
¼ c orange juice
¼ t ground ginger
1 T lemon juice
¼ c brown sugar
Freshly ground black pepper
Method:
1)Heat a frying pan and add olive oil.
2)Brown the chops on both sides in the hot pan, then transfer to a casserole.
3)Mix all the ingredients and pour over the meat.
4)Cover closely and bake at 180oC for about 45 minutes.
