Rolled Savoury Roast Lamb (Serves 4-6)
1 boned shoulder or leg of lamb
Stuffing:
3/4 cup dry breadcrumbs
8 dried apricots, finely cut
1 tsp celery salt
1 tsp onion stock
1 tsp green herb stock
1 egg beaten
Glaze:
2 Tbsp honey
2 Tbsp soya sauce
toasted sesame seeds
1)Mix breadcrumbs, apricots and seasonings together and combine with egg.
2) Lie lamb flat, skin side down and spread stuffing over meat, roll-up and secure with string.
3)Weigh, and estimate cooking time, allowing 15 - 30 minutes per 5OOgms, depending on desired degree of "doneness" that is preferred.
4)Heat honey with soya sauce until evenly mixed. Place meat in a roasting dish and brush with glaze. Cook 180oC, turning meat after half the cooking time.
5) Sprinkle with sesame seeds.
