2 Racks Highland Texel Lamb Racks
For the glaze:
1/2 cup mint jelly
1/4 cup wholegrain mustard
8 tsps sesame seeds.
For the crust:
1/2 cup fresh breadcrumbs
8 tsps sesame seeds
Method:
1) Preheat oven to 220oC. Line a roasting dish with foil.
2) Heat mint jelly in a saucepan over low heat until softened. Add mustard & sesame seeds.
Mix well.
3) Place breadcrumbs & sesame seeds in bowl & mix well. Place on greaseproof paper on a plate.
4) Brush tops of racks with 1/2 the glaze & then coat well in crumb mixture. Place on a rack in the prepared pan with crumbs upper most.
5) Bake 20-30 mins or as desired. Brush with remaining glaze 1/2 way through cooking.
6) allow to rest 15 minutes in a warm place.
