TROPICAL ROAST LAMB
The fruit stuffing compliments the spicy marinade, giving this rolled shoulder a delicious flavour. Most successful cooked in the microwave.
1 Highland Texel Gourmet Lamb rolled shoulder
1 tsp each of fresh chopped mint, rosemary & onion
salt & pepper
2-3 rashers bacon
9-10 prunes
1/4 cup dried apricots
1/4 cup chopped pineapple pieces
Marinade:
1/2 cup pineapple juice
1/2 cup water
2 tbsp tomato juice or sauce
2 tbsp dark soya sauce
1 tbsp vinegar
1/4 tsp each of curry powder, mixed spice & ginger
salt & black pepper
Method:
1) Remove lamb from netting & open up the shoulder. Sprinkle with the herbs, bacon & cover with prunes, apricots & pineapple. Roll up again & replace netting to hold in place.
2) Mix marinade ingredients in a casserole dish & place lamb in the marinade. Leave to stand for 15-30 minutes, turning twice.
3) Microwave on High for 8 minutes, then med-high for 11-14 minutes per 500 gms, turning every 10 minutes.
4) Lift out and place on serving plate. Cover with foil & rest for 10 minutes.
5) Thicken marinade with cornflour. Cook on High for 1-2 minutes.
