Val’s Quick Stir-Fry Lamb 2 Highland texel Gourmet Lamb Fillets, Rump or stir fry. Cornflour Oil 1 Packet of 2 minute noodles (Oriental Flavour). 1-2 Cloves crushed garlic 1 Onion or leek (chopped) 1 Cup of spinach (chopped) 1 Cup of cabbage (finely sliced) 1-2 Carrots (Cut into small sticks) Optional: Other vegetables such as: Corn Beans Courgettes
1) Cut meat into thin strips across the grain and dust with cornflour.
2) Heat oil on fairly high heat and quickly fry until browned. Set aside.
3) Add a little more oil, heat and gently saute garlic, onions or leeks.
4) Add the rest of the vegetables and a little water. Stir fry and then cover and steam until just cooked.
5) Meanwhile cook 2 minute noodles according to instructions and stir in flavouring.
6) Add the noodles and lamb to the vegetables. Stir until combined and serve with soy sauce if desired.
