APRICOT LAMB PATTIES

​INGREDIENTS
500 gm lean minced Lamb

2 onions, chopped finely

70 gm chopped mushrooms

1/2 cup chopped dried apricots

1/2 cup dry 
breadcrumbs
1 egg

3 Tbsp Worcestershire sauce

1 1/2 tsp salt

2 pinches cayenne pepper
SAUCE

​1 Tbsp Oil

1 1/2 Tbsp Flour

1 cup dry White Wine

​3 Tbsp Cream
Salt and Pepper
METHOD
1) Chop onions, mushrooms and apricots finely. Mix well with minced lamb, breadcrumbs, sauce, egg, pepper and salt.
2) Shape mixture into twelve patties (about 8 cm across) with wet hands, Leave mixture to stand, if possible so flavors can blend. Brown patties in oil. Cook about 6-8 minutes per side until firm in the middle.
3) Remove from pan and keep hot.
4) For the sauce pour off most of the oil.
Brown the flour in the pan, then add the wine and cook until bubbling and thick. Add cream, then salt and pepper to taste. Spoon sauce over patties and garnish with parsley.
