COUNTRY STYLE LAMB SHANKS

INGREDIENTS
A very tasty way to cook lamb shanks
6  Lamb shanks

1& 1/2 tbsp flour

2 - 3 carrots

1/2 cup tomato puree

1 cup water

1/2 cup wine or sherry

1 - 2 large onions

1 tsp sugar

5 - 6 celery stalks

1 tbsp Worcestershire sauce
METHOD
1) Roughly chop onions and put in bottom of baking dish. Lay shanks on top.
2) Mix flour and sugar together and sprinkle over top. Slice carrots and celery and add to the meat. Mix liquids together and pour over.
3) Bake at 130 - 140C for 3 - 4 hours (or cook in a Crock Pot)
Remember Texel Lamb cooks quicker than conventional lamb
Serves 6
