ITALIAN MEATBALLS WITH TOMATO SAUCE
Serves 4 These tasty meatballs are enhanced by a lovely home-made tomato sauce. INGREDIENTS 500 gms Lamb mince 1/2 cup grated Parmesan 1/4 cup fresh breadcrumbs 2 small eggs, beaten, 2 cloves garlic, salt & pepper to taste 1 tbsp marjoram or parsley 1/4 cup water TOMATO SAUCE 1 onion, chopped 1-2 clove garlic, crushed 1 tin diced tomatoes salt & pepper to taste marjoram or parsley, chopped. METHOD 1. Mix altogether in a bowl or food processor. 2. Shape into balls & fry in olive oil until brown. Drain. TOMATO SAUCE 1. Saute onion and garlic until softened 2. Add rest of ingredients & cook gently until pulpy. 3. Spoon over meatballs & serve with rice or orzo pasta. |
