LAMB DRUMSTICKS WITH MUSTARD SAUCE
Serves 2 - 4
2-4 Lamb Drumsticks (shanks)
1/2 cup Stock
1/2 cup sweet Vermouth
1 Tbsp Whole-grain Mustard
1. Brown drumsticks in hot pan
2. Place in deep casserole dish, add stock and Vermouth and stir to combine.
3. Cover and cook slowly in oven for 1 & 1/2 hours, stirring occasionally.
Remove drumsticks from pan and keep warm.
4. Boil liquid in casserole dish until reduced to 1 cup. Stir in mustard - this makes a thin 'glaze' sauce.
