LAMB STEAKS IN HONEY SAUCE

Serves 4
INGREDIENTS
4 lamb steaks

1 clove garlic

I tsp mustard

1 tsp salt

1/2 tsp pepper

2 Tbsp  oil

1 Tbsp honey

2 Tbsp cider vinegar

3 Tbsp sherry

1/2 cup light sour cream
METHOD
1. Rub steaks with garlic, mustard, salt and pepper.
2. Heat oil in frypan, add steaks and saute for a few minutes.
3. Add honey, vinegar and sherry. Cover and cook until steaks have reached desired stage. Be careful not to over heat as honey burns easily.
Remove steaks and keep warm.
4. Blend cream with juices to make a sauce.
Remember Texel cooks quicker than conventional lamb
